The ermine is a small mammal with a brown and white coat in summer, and entirely white in winter with the exception of the end of the tail which stays black. Its symbolic representation appears for the firrst time in 1318 on an official seal of the dukedom of Brittany.
The legend says that Anne of Brittany saw an ermine, tracked down by hunters, which suddenly stopped its run in front of a pond of muddy water. The queen obtained the mercy of the animal which had chosen to die rather than to stain its fur, which inspired her for her motto "Rather the death than the stain".
